'Gilberto' is the Italianized surname of owners Justin and Kristin Gilbert. Although of immutably Irish descent, both are life-long Italophiles, and have been studying and traveling extensively throughout the country for the past twenty years in the pursuit of knowledge, fun, advanced degrees in art history and, perhaps most importantly, great food. In preparation for the opening of Gelato Gilberto at Norton Commons, they spent nearly two years living in Italy with their two daughters, where they studied the art of making gelato, visited gelaterie in over 20 cities, and attended S.I.G.E.P., the biggest international gelato trade show, in Rimini.

Justin Gilbert holds a B.F.A. in Painting and Art History from the University of Kansas and a diploma in Intermediate Commercial Italian from the Scuola Leonardo da Vinci in Florence. He has extensive experience in the restaurant industry, most recently as director of franchise operations in the United Kingdom for Papa Johns International. He was trained in artisan-style gelato making at Carpigiani's Gelato University in Bologna, Italy.

Kristin King Gilbert holds a Ph.D. in Art History from the University of Iowa, specializing in eighteenth-century French painting. She has worked as a Project Manager for the Speed Art Museum and as Public Relations Assistant for the Kentucky Art and Craft Gallery.
